Almond Crusted Cod with Balsamic Glaze

I recently wrote a blog about the benefits of fish. I have incorporated fish into my healthy eating lifestyle at least 3 times per week. I have to tell you, I feel better than ever. Aside from the many benefits I discussed in my last blog, fish gives us so much protein, it is low fat, and has low net carbs. What does this do for us? The protein keeps us satiated and helps to repair and build muscle.

And NO, you won’t “bulk up” from protein. It’s a common question with protein and weight lifting. Remember, women do not produce enough testosterone to bulk up. We aren’t built that way.

So, go get some fish this week and experiment with recipes. There are so many! I’m really excited to share this one with you that I made. It was DELICIOUS! Almond Crusted Cod with Balsamic Glaze

(Gluten & Dairy Free)


Ingredients:

1lb. Cod Filet

Balsamic Glaze

½ Lemon


Almond Crumb Topping:

¼ C Almond Flour or Finely Chopped Almonds

½ tsp salt

½ tsp pepper

1 tsp garlic, minced

1 tsp olive oil

Lemon Juice from ½ lemon

½ tsp lemon zest


Directions:

  1. Preheat oven to 400

  2. In a food processor, combine all of the almond crumb topping ingredients.

  3. Slice ½ lemon and lay slices in baking dish topped with your filet

  4. Drizzle your fish with olive oil and top evenly with your crumb mixture

  5. Bake for 20 minutes

  6. Drizzle fish with the balsamic glaze
