Healthy Recipe Box: Parmesan Grilled Eggplant

This is a quick, healthy and light meal that will fill you up. You can always slice your eggplant to a thickness that you like. You can also use garlic.

I slice mine thin because I am a texture many of you can relate? Garlic dehydrates me so I try to use little or no garlic when I cook.
